How to Calculate Restaurant Profit: From Gross to Net

Many restaurant owners know they're "making money" but can't say how much. This guide teaches you the correct formulas for calculating restaurant profit.

"Making Money" Doesn't Mean "Making Healthy Money"

Many small restaurant owners measure profit by checking their bank balance at month's end. But this overlooks hidden costs — did you count your own salary? Equipment depreciation? With all costs properly accounted for, your profit may differ significantly from expectations.

Three Types of Profit, Three Levels

Gross Profit

Gross Profit = Revenue - Food Cost

The most basic profit metric. If monthly revenue is NT$500,000 and food cost is NT$175,000 (35%), gross profit is NT$325,000.

Operating Profit

Operating Profit = Gross Profit - Labor Cost - Operating Expenses

After deducting labor (salary + insurance + overtime) and operating expenses (rent, utilities, supplies, marketing). This number tells you: is the core business actually profitable?

Net Profit

Net Profit = Operating Profit - Loan Interest - Taxes - Depreciation

This is what actually goes into your pocket. Taiwan's restaurant industry averages 5-15% net profit margin. Below 5% means high risk with almost no return.

Calculation Example

A 30-seat restaurant with NT$600,000 monthly revenue:

  • Food cost: NT$198,000 (33%)
  • Labor: NT$168,000 (28%)
  • Rent: NT$60,000 (10%)
  • Utilities: NT$30,000 (5%)
  • Other: NT$24,000 (4%)

Operating profit = NT$120,000 (20%). But after loan interest, owner salary (NT$50,000), and depreciation, net profit may be only NT$50,000-70,000 (8-12%).

1. Lower Food Costs
