Monthly bookings × no-show rate × average spend per party is the revenue lost each month; multiply by twelve for the year. That figure still excludes the table you could have turned to a walk-in.
There is no cross-restaurant public statistic and it varies a lot by venue: weekend dinners, large parties and peak slots run highest. The reliable number is your own last three months of bookings; if you have none, start with the tool's default and begin recording.
