What counts as labour cost?

Wages, overtime, bonuses, the employer's share of insurance and pension, outsourced staff — and the owner's own salary, which small restaurants most often leave out and thereby understate the ratio.

If the ratio is high, should I cut staff first?

Look at the denominator first: more revenue from the same team (filling off-peak bookings, cutting no-show empty tables) often moves the ratio faster than cutting hours. The tool shows the effect of each extra table so you can choose between re-rostering and reducing staff.

How does this connect to scheduling?

Once you know the ceiling you can afford, you can back out the maximum hours per day. Eatsy Workforce's roster totals each person's days and each day's headcount live, so you can check it against that ceiling.
